How do online credit card scams and identity theft work?

...and how to not fall for the trap?

For an example say you put your card details on a scam site to buy a product, what details do they need to be able to use your bank account and steal money? is it more than or different to the usual details you need to use to buy products online from legitimate sites? If it's a certain amount of details how do people still fall for it, isn't there a detailed list of what not to give out?

Any help appreciated.
